Why Sunflowers Have So Many Types
Types of sunflowers include three plant structures: tall single-stem (Mammoth, American Giant, Pro Cut - one large bloom on a 4-12 foot stem), branching multi-bloom (Italian White, Velvet Queen, Autumn Beauty - multiple smaller blooms per plant), and dwarf (Teddy Bear, Suntastic, Elf - compact containers). Colour goes beyond yellow: red, burgundy, chocolate brown, white, cream, and bicolour varieties all exist. Over 70 species in the Helianthus genus have produced hundreds of named cultivars.
For bouquet purposes, the choices narrow to three main categories based on plant structure (tall vs branching vs dwarf) plus colour variations.
Tall Single-Stem Sunflowers
The classic sunflower - one tall stem (4-12 feet) with a single large bloom at the top:
- Mammoth (Russian Mammoth) - the giant variety; can reach 12+ feet; massive seed heads
- American Giant - hybrid; reaches 14 feet; for show-garden growing
- Sunzilla - 16-foot variety; the largest commonly grown
- Pro Cut series - bred specifically for cut flowers; uniform height, sturdy stems
Most florist sunflowers are cut from Pro Cut or similar cut-flower-bred varieties. They are tall enough for impact but shorter than garden giants - usually 4-6 feet at harvest.
Branching Multi-Bloom Sunflowers
Branching varieties produce multiple smaller blooms on one plant:
- Italian White - cream-coloured branching; popular for summer weddings
- Strawberry Blonde - bicolour pink and yellow petals
- Soraya - deep golden-orange branching variety
- Velvet Queen - dark red branching; dramatic
- Autumn Beauty - bicolour mix; mixed yellow, orange, red, burgundy
Branching varieties are the standard for cut-flower farms because one plant produces 4-8 usable stems. They are more common in mixed bouquets than in single-stem bunches.
Dwarf Sunflowers
Compact varieties bred for container growing or table arrangements:
- Teddy Bear - shaggy, fully double; looks like a sunflower-pom-pom; 2-3 feet tall
- Suntastic Yellow - 12-inch plant with full-sized blooms; container favourite
- Sunny Smile - 12-15 inches; classic look, miniature scale
- Elf - extremely short (14 inches); pure miniature
Dwarf sunflowers are rarely sold as cut flowers in commercial florist stock - they are mostly for home growing or potted plant gifting.
Colour Beyond Yellow
Most sunflowers are yellow, but the colour range is wider than people think:
- Classic yellow - the volume leader; "Pro Cut Yellow"
- Golden orange - "Pro Cut Orange"; warmer tone
- Red and burgundy - "Velvet Queen", "Moulin Rouge"; deep dramatic colour
- Chocolate brown - "Chocolate Cherry", "Chocolate Gold"; rare and modern
- White / cream - "Italian White", "Pro Cut White Lite"; popular for weddings
- Bicolour - "Strawberry Blonde", "Autumn Beauty"; gradient petals
- Green-centred - "Procut Green"; subtle modern look
For a fall arrangement, red, burgundy, or chocolate sunflowers anchor the warm autumn palette beautifully. For weddings, the white and cream varieties (especially Italian White) are popular.
When Sunflowers Are in Season
Peak Canadian sunflower season is July through September, with the absolute peak in August. Local Ontario growers produce sunflowers all summer for both cut-flower and pick-your-own farms (a popular Ontario summer activity).
Sunflowers are available year-round through import (mostly from Colombia and Ecuador), but summer-fresh local stock is noticeably more vibrant and longer-lasting. A summer sunflower bouquet from a local Toronto florist will outperform a winter imported version every time.
